Easy, Healthy Chicken Salad

With summer quickly approaching, simple, healthy meals are going to keep you on track. This version of the classic chicken salad is not only healthy but delicious! Serve it on its own or put it on Ezekiel Bread for a quick and easy lunch.

Ingredients:

– 2 cups cooked, chopped chicken
– 1/4 cup plain greek yogurt
– 2 tsp mustard
– 3 tbsp chopped celery
– 1/4 cup chopped red or green seedless grapes
– Salt and Pepper to tase

Directions:

Combine all ingredients and stir until well mixed. Refrigerate or serve immediately. Really, it’s that easy!

Note: 

when I prepare this recipe, I boil the chicken breast for 15-20 minutes until cooked. Then using two forks, shred the chicken.
