Turkey Chili with Sweet Potatoes

The cornbread may not be paleo, but it is a nice addition to our turkey chili with sweet potatoes! This is a super easy (and tasty) meal to prepare for your Superbowl party or to prep out as a healthy lunch option for the week. Give it a go and let us know what you think.

Ingredients:
1 lb ground turkey
1 yellow onion, chopped
1/2 tsp kosher salt
1/2 tsp fresh pepper
4 cloves fresh garlic, chopped
1tbsp olive oil
1 tbsp chili powder
1tbsp ancho chili powder
1 tbsp cumin
1/2 tsp nutmeg
3 medium sized sweet potatoes.
1 c red quinoa
2 14.5oz cans fire roasted tomatoes
1 14.5oz can black beans
3-4 c organic chicken broth
Directions:
  1. Heat oil in a large skillet over medium heat and add turkey, onion, salt, pepper and garlic. Cook for 5-7 saves minutes, or until the turkey is cooked through and onions start to become translucent.
  2. Add chili powder, ancho chili powder, cumin and nutmeg. Cook for 30s or until fragrant. Line the bottom of your crock pot with the turkey and onion mixture.
  3. Add sweet potatoes, quinoa, fire roasted tomatoes, black beans and chicken broth.
  4. Cook on high for 4 hours, or low on 5-6. The sweet potatoes will take the longest to cook, so as soon as they are tender the chili is ready to go!
